Innovation

Innovation is our driving force and our source of inspiration. It comes from technology and machinery, but also from encounters with and discoveries of different cultures.

It lets us experiment, try things out, and play around with textures and flavors.

Transmission

At our laboratory in Andrézieux-Bouthéon, the knowledge we pass on within our close-knit team goes beyond just technical skills and proper techniques. It also involves sharing common values and a love for the craft.

Quality

Beyond our quest for the finest cocoa as a raw material, the consistent quality of our chocolates also stems from our careful selection of tools and machinery—which complement manual labor—and which are used throughout every stage of production: roasting, grinding, conching, all the way through to pralines and ganaches.

Philippe BEL

Best Craftsman of France: Chocolatier and Confectioner

It was as a young apprentice in fine pastry making that Philippe Bel discovered the art of working with chocolate. It was a moment of revelation—it just clicked. And that moment gave rise to his calling.

“Working with chocolate means creating harmony between flavors and textures.”

A native of the Yvelines region, he spent his early training years at several renowned chocolate shops in Paris. As he worked his way up the ranks, he went on to hold management positions in Saint-Étienne.

Encouraged by his peers, he took the exam and received his “Meilleur Ouvrier de France” jacket in 2004.

This award became a driving force for creativity. In 2006, he founded his own fashion house and built his reputation. He then opened his first boutique in Montbrison, followed by one in Lyon in 2009.

Philippe Bel combines exceptional craftsmanship, innovation, and a rigorous pursuit of balance between indulgence and respect for the raw ingredients.

A passionate chocolatier, Philippe Bel champions craftsmanship and precision—from the cocoa bean to the chocolate bar. He doesn’t hesitate to travel regularly to all corners of the globe to meet with cocoa producers.

“I feel it’s essential to have a thorough understanding of the products I work with and use as raw materials.”
